Indeed, there is a big loss of detail in the bright parts. When the dynamic of the camera is not sufficient for the scene, man can use the "exposure compensation" mechanism that almost all cameras have. It allows to say to the camera that we want a brighter or darker image (often expressed in EV or 1/3 EV) so that we can correct the exposition automatically computed by the camera which can be fooled by the spread of intensities in the image. Of course, man can use manual mode as well.
The highlights on the white heads of these birds are all blown out. I had the same exposure issue with my Canon a810 cameras. They just didn't have the dynamic range to keep details in the highlights.
